I am not a huge fan of sweet potatoes. Something about them just rubs me the wrong way. BUT, I make an exception to this recipe – mainly because it tastes like a dessert.
It’s crunchy top, mixed with its custard-like center makes for the perfect side dish or dessert. I first tried this at the mother-in-laws and I hailed to the heavens with how amazing it was. I then made it for Thanksgiving and everyone was just as into it as I was.
I was inspired to make it once more so I found a similar recipe (since I lost the original) and gave it a go. Even though I forgot to add the butter to the topping mix (I know, what was I thinking?!) I melted it and poured it over the topping and it still came out great. As you can see, there isn’t much left.
